This creamy, cheesy mashed potato and chicken casserole is a tasty side dish, although you’ll be tempted to eat it straight from the oven with a spoon while nobody is watching!
INGREDIENTS
  • 1.2kg brushed potatoes, peeled
  • 50g butter
  • 300ml sour cream
  • 2 shallots, sliced
  • 1 cup cooked chicken, shredded
  • 2 cups grated tasty cheese
  • 1/2 cup grated mozzarella

INSTRUCTIONS

Step 1

Preheat oven to 180C.
Step 2
Cut potatoes into even pieces and boil in salted water for approximately 10 minutes until a knife can be easily inserted. Drain and return to saucepan. Mash well, then stir through butter, sour cream, shallots, chicken and 1 cup cheese. Season well with salt and pepper. Transfer to an oven-proof dish and smooth the top. Sprinkle over remaining tasty cheese and mozzarella. Bake for 15-20 minutes until cheese is melted and golden.
