INGREDIENTS
  • 1/2 cup orange juice
  • 1/3 cup maple syrup
  • 2 tsp grated ginger fresh
  • 1 garlic clove crushed
  • 720 g salmon fillet

INSTRUCTIONS

Steps

  1. Preheat oven to 200C.
  2. Line baking tray with baking paper.
  3. In a small pan over medium heat, combine the orange juice, maple syrup, ginger and garlic and bring to the boil.
  4. Reduce the heat to low and simmer for 5 minutes or until the sauce has reduced and is a syrupy consistency.
  5. Place salmon on baking tray.
  6. Use half the glaze to cover the salmon.
  7. Bake for 8-10 minutes or until the salmon is cooked as desired.
  8. Use the remaining glaze to serve over salmon.
  9. Serve with potato and a simple green salad.

Watch the glaze as it takes next to no time to get to a syrupy consistency. The remaining glaze, you may wish to baste the salmon further while it’s still in the oven, just be sure to leave some to drizzle over the baked fillets. Gourmet Garden Ginger blend is a good substitute if you don’t have any fresh ginger. Still using 2 teaspoons. You can cook this both in the oven and on the stove top, both with great results.
