Lamb stew is a comforting and wholesome dish that's relatively easy to prepare. Feel free to add other vegetables you have on hand or adjust the seasonings to match your preferences. Enjoy your family meal!
INGREDIENTS
  • 500g lamb stew meat, cut into bite-sized pieces
  • 30ml olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 4 carrots, chopped (about 400g)
  • 4 large potato, peeled and chopped (about 800g)
  • 1 litre beef or vegetable broth
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 30ml corn flour mixed with 30ml water (optional, for thickening)

INSTRUCTIONS

Step 1
Brown the Lamb: Heat the olive oil in a large pot over medium-high heat. Add the lamb and brown on all sides. Remove the lamb from the pot and set aside.


Step 2
Sauté Vegetables: In the same pot, sauté the onion and garlic until softened and fragrant.


Step 3
Add Remaining Ingredients: Return the lamb to the pot, then add the carrots, potatoes, broth, rosemary, thyme, salt, and pepper. Stir to combine.


Step 4
Simmer: Bring the stew to a boil, then reduce the heat to low and simmer covered for 1.5 to 2 hours, or until the lamb and vegetables are tender.

 

Step 5

Thicken if Desired: If you prefer a thicker stew, stir in the cornstarch-water mixture and cook for an additional 5 minutes, or until thickened to your liking. Taste the stew and adjust the seasoning if necessary.

 

Step 6

Serve: Divide the stew among four bowls and serve with crusty bread or a simple side salad.
